Coconut Pistachio Ice Cream

      

Ingredients:

1 Cup Almond Milk ( I like to make my own )

1 Cup Coconut Water

1 Cup Young Coconut Meat

1/2 Cup Dates

2 T Coconut Oil

1 T Vanilla Extract

1 Cup Raw Pistachio Nuts (Shelled)

1/4 Agave (Optional)

Directions:

1. Place all Ingredients except 1/2 cup of Pistachios into a high speed blender and blend well.

2. Process in an ice cream maker.  ( I like the one by Cuisinart )

3. Chop the remaining 1/2 cup pistachios and add when the ice cream is almost complete.
